Written Reports: Each student will be responsible to independently research and write a minimum 5 page report comparing and contrasting two (2) of the specific regions that we will be visiting throughout the course. Each report will be type written (12 point font) and must include the following: - Geographic location and why it would have an affect on the cuisine? - Historically which groups (Phoenicians, Romanians, etc.) had an influence on the cuisine? - What are the practical and social rituals associated with the cuisine? - Which ingredients, seasoning, cooking procedures and styles are attributable to the region? - How has the cuisine of the region changed over time? - What are the major classical cooking techniques associated with this region’s cuisine? Why is this so?
